The Shoreditch Smoker

Update – Moved to Camden Lock Market

The Shoreditch Smoker will be at Camden Lock Market from next Monday (5th September) We will be there Monday to Friday – 10am-6pm

Inspired by Niamh aka Eat Like a Girl who ran a market stall at Covent Garden Real Food Market and Abiye who sells what has to be London’s best hotdogs at BigAppleHotDogs, I decided to start a market stall at Red Market in Shoreditch.

After much deliberation the choice was made to start The Shoreditch Smoker – to smoke all kinds of meat and fish.

The Shoreditch Smoker - Market Stall

With some help from Stuart and Fred@Disappearing Dining Club, some chats with the friendly folks at Cooks with ThaneTheRibman, Kimchi Cult, BigAppleHotDogs, RedMarketLondon and some great help from Rochelle from Rushmore, I managed to create the Shoreditch Smoker!

The food on offer is prepared in a secret underground bunker in Shoreditch and goes through the process of being cured, cooked and smoked in various ways and for various amounts of time. Here is the cold smoker we use to smoke some of the Salmon.

The smoker somehow reminds me of the Black Knight in Monty Python’s Holy Grail. “It’s just a flesh wound!”

We are currently selling “Hot smoked” and “Cold smoked” salmon served on toast with Crème fraiche and chives.

We also serve Smoked Ham on toast with home-made piccalilli.

This weekend we will be serving new dishes including 1/2 pint of smoked prawns and Smoked Pulled Pork served in a bap with BBQ sauce

The bread is supplied by the folks at E5 Bakehouse. Based in London Fields, they supply us with the most incredibly tasty organic bread. We use the Multigrain and the Borodinsky rye bread to serve the Salmon and Ham dishes.

The stall has only been open for a week and already the feedback has been incredible –

Martin, a Canadian chef at the end of a three-week holiday in England said that the smoked salmon was “The best food I have had in England.”

Dave, a fellow food smoker said the piccalilli was “The nicest I have ever tried.

A chef who is working at the two Michelin star restaurant L’Atelier de Joel Robuchon commented that the salmon was “Fantastic.

Looks amazing – I was all ready to put the details aside for next time I come your way. What a pity!
If you are researching markets, have you tried Walthamstow Sunday Farmers’ market – High St 10am-2pm – not sure if you meet the criteria (dont’ know too much about these things) but it is a small and lively (and fairly near to you) place. There is food but I have never seen a smoking stall!
